Cervaro della Sala - White Wine, from Marchesi Antinori, is a benchmark white wine from Umbria, made from Chardonnay with a small percentage of Grechetto. The name derives from the noble Monaldeschi de la Cervara family, former owners of Castello della Sala in the 14th century. Designed to evolve in the bottle, it seeks to express the elegance and complexity of this unique place.
It has a delicate straw-yellow color with slight greenish reflections. The aroma reveals notes of chamomile, white flowers, and flint, accompanied by hints of ripe plum, fig, and pear, as well as hints of hazelnut, honey, and vanilla. On the palate, it is intense and consistent, with a long, fruity, and spicy finish, where notes of vanilla, citrus, and light nuances of hazelnut butter emerge.
Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and aging in barrels, a profile that helps define its depth and aging potential. It is recommended to serve it between 8ºC and 10ºC.
