In the winery, the grapes are harvested manually, chilled overnight, and then crushed. This is followed by a pre-fermentation cold maceration, a process that contributes to the extraction of color and aromatic compounds. The must is then transferred to a robotic stainless steel press, where fermentation begins. Aging takes place for 12 months in new 500-liter French oak barrels, adding greater complexity and a subtle contribution of wood to the whole.
