Enate Chardonnay Fermentado en Barrica - White Wine is one of Enate's flagship wines in the Somontano DO, made exclusively from Chardonnay. It reveals a remarkable balance between the expression of the fruit and the influence of the wood, the result of careful work on the lees and aging in barrels that gives it depth and elegance.
It has a bright straw-yellow color. On the nose, it is complex and exuberant, combining varietal notes of hazelnut and toasted bread with tropical hints of pineapple and grapefruit, enveloped by delicate smoky notes from its cultivation. On the palate, it is dense and creamy, with ample development and a fresh acidity that sustains the whole and leads to a very long, balanced finish marked by the return of fine toasted nuances.
The must undergoes alcoholic and malolactic fermentation in new French oak, then remains for seven months with fortnightly bâtonnage (stirring by bâtonnage). Finally, the wine is clarified and stabilized. It should be served between 9 and 12°C. It is an excellent choice to accompany oily fish, white meats, smoked meats, spicy dishes, intensely flavored cheeses, and desserts such as Tarte Tatin.
