East India Solera - Fortified Wine, from Lustau, is a fortified Jerez wine inspired by the historical tradition of wines that crossed the oceans in the 17th century and returned to European ports. Produced from Palomino Fino and Pedro Ximénez grapes, it results in a sweet and complex style, marked by long aging in the solera system.
It has a dark mahogany color with amber reflections. On the nose, it reveals concentrated notes of ripe fruit, mocha, cocoa, and toffee. On the palate, it shows great complexity, with clean acidity and flavors that evoke raisins, nuts, and caramelized oranges, in an enveloping and persistent whole.
According to available information, the wines age separately for 12 years before being blended and then aged together again for another 3 years in the cellar's solera. This process contributes to the aromatic depth and the balance between sweetness, freshness, and richness of flavor.
It should be served between 10 and 12 ºC, ideally in a wide glass, with ice and a slice of orange. It pairs well with foie gras, cheeses and desserts, and is also an excellent option to enjoy on its own.
